Valentine's Heart Cookies

 

This is a "cutifyed" version of the Dessert Pizza, in small bite-sized munchies. Of course you can make them smaller or bigger. I've worked with one light dough and a dark dough and cut two cookies out of each. Then I applied the dark / light frostings and put them to rest in the fridge for about one hour. Very easy to like with a melt-in-your-mouth-feel to them like real shortcrust pastry
. 

 

Vanilla Cookies with Dark Chocolate Frosting (nut free)

Makes about 2-5 cookies depending on the size of the cookie cutter.
Vanilla & Lemon Cookies
 
• 1 cup shredded Coconut (grind into a flour)
• 0.5 cup shredded Coconut (keep as it is)
• 2 tablespoons virgin Coconut oil
• 2 tablespoons Water
• 1/4 cup Lúcuma
• 1 pinch of Himalayan salt
• 2 big pinches of Cardamom powder
• 1/4 teaspoon real Vanilla
• 1 teaspoon organic Lemon juice
• 0.5 teaspoon zest from an organic Lemon
• 3 teaspoons light Agave or honey
 
Grind the 1 cup of shredded Coconut in a coffee grinder or blender into a flour. Don't use readymade coconut flour as the dough then will be too dry. Add all of the ingredients to a food processor and process until incorporated. Work the dough with your hands to create a big dough ball. Press down the ball with your hands and try to get it as flat as possible. Cut out heart shaped cookies. Continue with the chocolate frosting!
 
 

The Chocolate Frosting

• 0.5 cup virgin Coconut oil (melt in a water bath)
• 3 tablespoons raw Cacao powder
• 2-3 tablespoons Lúcuma
• a pinch of Himalayan salt
• 1/8 teaspoon real Vanilla 
• 3 tablespoons dark Agave
• 4-6 drops Peppermint essence or orange juice (optional)
 
Melt the Coconut oil and add the rest of the ingredients to a bowl. Whip by hand until blended. Pour into a squeeze bottle and set in the fridge to chill a bit. You want the right consistency for the frosting to make a heart-shaped line without being to runny or to hard so nothing will come out of the pipe. 
Try to pipe some of the frosting ontop of your hand to test the consistency. If you can draw a straight, pretty line it's time to apply the frosting on the cookies, using the squeeze bottle. First make a heart shaped line. Then fill the heart with more frosting. Put the readymade cookies in the fridge to harden, about an hour.
